Dive into the oyster lines, pull up your strand, pick an oyster and… suspense! If it’s empty? Try again! A grafting demonstration reveals the precision of the grafter’s art, followed by a local tasting: the famous korori - the oyster’s muscle - served with fresh lemon juice.
